Las Vegas group rolls the dice on Dallas via Italian steakhouse and Asian bar

A Las Vegas hotel group is coming to Dallas with two restaurant openings. One will be an Italian steakhouse, the other an Asian restaurant and bar.

The group is Hooper Hospitality Concepts, which owns Italian and Mexican restaurants in Las Vegas. The restaurants are:

  • The Saint, an Italian steakhouse, will open in the former Two Sisters space at 2633 Gaston Ave., in fall 2022.
  • Night Rooster, a modern Asian restaurant and bar, opens in the Design District at 1000 N. Riverfront Blvd. early 2023.

In a statement, Hooper Hospitality Concepts CEO Andy Hooper describes Dallas as “an incredible city with one of America’s most exciting and diverse food scenes,” and promises The Saint and Night Rooster will offer unique dining experiences, combining Las Vegas flair and Texas hospitality.

Hooper has opened restaurants such as The Black Sheep, in Las Vegas, which serves an original take on modern, casual Vietnamese-American cuisine in an upscale neighborhood environment; and Locale Italian Kitchen + Craft Cocktails in June 2019 at Mountain’s Edge, which was honored with a James Beard nomination and named New Restaurant of the Year by the Nevada Restaurant Association.

The Saint will offer a fresh Italian-inspired menu, highlighted by dry-aged meats and chops, fresh homemade pastas and an abundance of vegetable dishes for vegetarians or vegans. The beverage program will feature inventive takes on classic cocktails, with house-made syrups and tonics, as well as a robust wine list featuring Italian wine and Californian reds.

The 4,900 square foot space will provide lounge seating for 120 guests, with a warm design that deviates from the classic steakhouse. The overall design is inspired by the “saints and sinners” theme, with an influence of modern art with contrasting moods, achieved using materials and design, such as wood and steel, as well as shades of bright and dark colors.

At Night Rooster, diners can expect to see sharing plates with dim sum and classic Asian dishes, as well as Japanese beef and raw fare. The restaurant will feature a cocktail program with a strong emphasis on Asian whiskeys, soju and sake with fresh and floral components.

The large space will include seating for over 300 guests, with 4,000 square feet of space indoors and an additional 3,000 square feet outdoors, including ground floor seating and a modern roof. The interior is modern Asian-inspired, with a dark and brooding atmosphere, while the outdoor dining space on the lower level is inspired by a Hong Kong alleyway. The roof will feature a modern Asian design, adorned with wood and plant accents.

The Saint will open in the former Two Sisters space at 2633 Gaston Ave., Dallas, TX 75226 in fall 2022. Night Rooster will open in the Design District at 1000 N.
